Redhat installation procedure on T7400

I need to reinstall Red Hat Enterprise 5 WS x64 on my new Workstation Dell 
precision T7400 because the shipped SO is not configured as I need.

The workstation is configured:
-2 intel xeon quad processors
-4 sas HD 300Gb 
        -1 for SO
        - 3 in striping
-16 gb ram
-nvidia quadro 1700

1) I have problems with the graphical interfaces, it's seem impossible 
install the SO in graphical mode.
     I had already installed the so in text mode but now I'm not able to 
activate the graphical interface.

2)There is somewhere a recommended procedure to install the SO.

3)May you help my to choose the best partition schema for my 
configuration?
