Performances order may be something like this:
1) VMWare ESX
2) XEN paravirt
3) XEN full virt
4) VMWare server
There are lots of architectural differences between these solutions,
you should investigate.
VMWare ESX is a large enterprise class product, with benefits,
complexity and costs.
I use with satisfaction CentOS-5.1-x86_64 with XEN and many
paravirtualized CentOS-5.1-x86_64 machines and performances are very
good.
