You are correct in that reconfiguring will blow away the RAID array. Below are the steps to create your RAID in the bios. Please back up any data before proceeding.

You can create your RAID 10 from the Adaptec bios by pressing ctrl-a during post and then selecting container configuration utility
>From the main menu select initialize drives, THIS WILL DESTROY ALL DATA!
After initialization select create container
>From the container menu you need to select which channel you want to select drives from and then you will see a list of drives.
Highlight the drive you want to add to your array and press insert, repeat for all drives you are including.
When the above is complete press enter and you will see the array configuration screen.
Use the arrow keys to highlight container type and select RAID 10 from the list.
Set the cache to your preference and then arrow down to done.

I hate to ask this. But how do I configure RAID with OMSA? I am
connected to srv admin console via https. The current setup is RAID1 on
channel 0 (2 disks) and RAID5 on channel 1 (3 disks). I need to "Reset
Configuration" which would blow these volumes and start over. The real
dumb question is If I reconfig everything, wouldn't that blow away the
OMSA software as well? Then how would I reconfigure?

Again, sorry for these questions, I could not find info on this on the
dell web site or google
