  Shouldn't be a problem.  All the PERC's going back to at least a
PERC 3 support non-destructive reconfiguration of logical volumes.
You can do it in the BIOS utility (pre-boot), or with OMSA, or with
stand-alone tools (if they're available).

  You could make three different mirror sets of two disks each (six
physical disks total).  Or two mirror sets and one RAID-5.  Or
