Memory usage on rhel Dell 2650 box

The system is ON for a month now. I believe there is not much io other than
writing to log files (I am not sure if that counts for caching). 

I tried to tar large folders on the machine and that took cache to about 3.5
GB, and after and hour it came back to normal 800 MB. 

I believe that is due to the age_buffer parameter. My other two machines are
similar ones, but for them the buffer is not coming down. I do not have
bdflush rpm installed on any of them. 

Is there any way to check age_buffer parameter?

Has the system been on very long?  Has it had reason to access the
disk much?  Perhaps the processes aren't doing much I/O for memory to be
used for cache?
