Try using parted tool with "mklabel gpt". Use XFS as filesystem
lilo as bootloader (grub doesn't support gpt/EFI) and enable
XFS_FS, EFI, EFI_PARTITION (in PARTITION_ADVANCED) in your kernel.

We use this special procedure on our servers with more than 2Tera
using 3ware SATA cards.

I have a Dell 2950 with Perc 5/i and I will test 750G soon on it
give you more feedback. We are evaluating Dell 2950 as an alternative
to home made server using 3ware as controler.
