Compared to what? :-)  Compared to a rack-mounted server, they're very
quiet.  I've got a Precision 370 at home, replacing an older server, and it's
quite a bit quieter.  Compared to a laptop though, it's a bit louder.
I don't have any dB measurements to offer though, just my subjective impression.

They've got a gigabit ethernet adapter on the motherboard already.
You can add another if you like.
